To understand the value of an Early Harvest EVOO, we need to talk about generosity. When the olive is ripe (black), it produces much more oil. However, when we harvest in October or early November, the fruit is much more "stingy."

To obtain a liter of our early harvest oil, we need up to 10 or 12 kilograms of olives, compared to the 4 or 5 kilograms used in a late harvest. It's a conscious sacrifice: we forgo quantity to concentrate all the essence, strength, and soul of the olive in every drop.
